After years learning alongside his father Gerhard, he now leads Stiftsschmiede with his own style. Precise, nature-driven, and refreshingly honest. His dishes capture the essence of the Alps-Adriatic region, blending lake fish, wild herbs, and seasonal vegetables into creations that feel both traditional and new. Each plate reflects his belief in simplicity, integrity, and the ongoing rhythm of the seasons.
