Thomas Gruber is a Carinthian-born chef with a strong commitment to Slow Food and regional cuisine. After opening his own restaurant, he spent seven years as culinary director at Schlosshotel Velden, shaping its gastronomic direction before moving to Schladming. At Haus Zirngast, he continues to focus on seasonality, sustainability and traditional recipes from the region. His cooking is shaped by experience, clear standards and a genuine appreciation for product quality, always allowing the ingredients and the people behind them to take the lead.
