At ROOTS, he uses the mountain setting, small producers and Bulgarian heritage as material for refined fine dining, giving guests a creative view of the country’s flavours through a precise and elegant kitchen.

ROOTS is a contemporary fine dining restaurant inside Flora Boutique Hotel in Borovets, at the foot of the Rila Mountains. Chef Veselin Kalev takes Bulgarian culinary heritage as his starting point, then gives it a modern, refined shape through seasonal produce, local sourcing and precise technique. The restaurant seats up to 60 guests, with a year-round garden for another 55. It feels warm and mountain-led, with spices, history and regional ingredients brought into a polished setting for guests who want to taste Bulgaria in a more considered way.
