JRE-Chef Laurent Smallegange on pure flavours with a view over the Westerschelde

A talented chef serving modern Dutch cuisine with a breathtaking view of the Westerschelde — that is Laurent Smallegange, JRE chef-owner of Restaurant Spetters in Breskens. For nearly fifteen years, he has showcased his signature style here: pure, elegant, and refined, balancing regional roots with global inspiration.

From family kitchen to Michelin star

Laurent’s love for cooking began at home. As a child, he spent countless hours in his parents’ restaurant, helping to chop herbs or make ice cream. “The Burgundian way of life was spoon-fed to me from a young age,” he recalls. At eighteen, he graduated from the Ter Groene Poorte culinary school in Belgium and set his sights on the top of the gastronomy world. Young, curious, and ambitious, he gained experience in leading restaurants both in the Netherlands and abroad — and at just twenty-two, he took over Spetters.

That courage paid off: in 2013 the restaurant was awarded a Michelin star, followed by recognitions such as Promise of the Year (Gault Millau, 2015) and the JRE-Netherlands Award – Restaurant of the Year 2025.

A philosophy of simplicity and experience

“I believe in pure cooking,” says Laurent. “No fuss — just good products, beautifully prepared. Simplicity and product-driven cuisine.” His dishes are all about balance and tension: fish, shellfish and crustaceans often take centre stage, complemented by worldly flavours that define Spetters’ signature style.

He finds inspiration everywhere — during a walk by the sea, a conversation with a supplier, or while driving to and from the restaurant. “Sometimes an idea just appears, precisely when you’re not looking for it.”

For Laurent, cooking is about more than flavour — it’s about emotion. “It’s about creating an experience: a good glass of wine, beautiful food, and that special feeling guests take home with them. Behind the scenes, the team is sacred. With positive energy and mutual respect, you can truly create something exceptional.”

Restaurant Spetters

Located in the marina of Breskens, Spetters offers a panoramic view of the Westerschelde and the sailing boats heading towards Vlissingen — a scene that’s constantly changing.

Spetters stands for quality without pretence, for warmth, calm, and trust. “Luxury should feel relaxed,” says Laurent. “Whether guests come for a long evening of fine dining or to celebrate something special, they should always feel at home.”

The kitchen reflects that philosophy: pure, seasonal ingredients from nearby producers, paired with subtle international influences. “Our strength lies in fish and shellfish — ingredients that come literally from just around the corner. We give them the attention they deserve, without hiding them behind anything unnecessary.”
