Trofie: Abbraccio di Mare e Terra

This dish celebrates the island’s bounty from both sea and land: wild fennel evokes the Mediterranean landscape, while the red shrimp from Mazara, slipper lobster, and Mediterranean mussels capture the essence of the sea. PREPARATION INSTRUCTIONS
THE WILD FENNEL PESTO
Blend the wild fennel with olive oil, salt, pepper, and Pecorino until you obtain a smooth pesto.

| 1 dl. | Extra virgin olive oil |
| to taste | Salt |
| to taste | Pepper |
| 20 g. | Pecorino Siciliano |
THE SHELLFISH BISQUE
Sauté a shallot gently in olive oil over low heat until golden.
Add the shellfish shells and lightly brown them.
Deglaze with white wine and let it evaporate for a few minutes.
Add a tablespoon of tomato concentrate and let it simmer to intensify the flavors.
Blend everything and strain to obtain a fine, fragrant bisque.

THE SEAFOOD MARINATE
Season the fish and shellfish with olive oil, salt, and pepper.
Let rest for a few minutes.

COOK THE TROFIE
Boil the Trofie in salted water and cook until al dente, about 12 minutes.

HOW TO PLATE
Use a pastry ring (coppa pasta) or a deep plate to shape and present the dish neatly.
Arrange the Trofie harmoniously in the center of the plate.
Gently add the marinated and cooked seafood.
Pour the shellfish bisque to elevate and intensify the flavors.
Garnish with fresh herbs for a touch of freshness and visual elegance, and finish with a drizzle of olive oil.
