Chef Roberto Pisano’s cuisine starts with what the sea offers and how it should be treated. Fish changes daily, selected directly and handled with techniques such as dry-aging to deepen flavour and texture. The kitchen works with the whole ingredient, using less common species and underused cuts as part of a zero-waste approach. Vegetables come from the garden, dairy from the restaurant’s own sheep, and everything is driven by seasonality and local biodiversity. The result is Sardinian seafood cooking with a contemporary, precise edge.
Candlelight and Events
La Spigola offers a dedicated Candlelight Table: one table for two, close to the sea, with a welcome glass of sparkling wine, a dedicated server, and a five-course tasting menu built around sea and land. On request, the team can add a personalised bouquet or live music. The restaurant also hosts corporate events, retreats, gala dinners, weddings, and private celebrations, with menus tailored to the occasion. Chef Roberto Pisano is available for private dinners and small events off-site, including at home.
Costa Smeralda Setting
La Spigola is in Golfo Aranci, a coastal town on north-east Sardinia, with direct views over the Mediterranean and immediate access to the shoreline. The setting is defined by clear water, open beach, and the light of the Costa Smeralda, which frames lunch and dinner service throughout the season. It is an easy base for exploring the surrounding coast, and the restaurant’s seafront position keeps the experience closely tied to place, with the day’s catch reflecting local fishing cycles and availability.
Zero-Waste Philosophy
Sustainability at La Spigola goes beyond sourcing. The kitchen works to reduce waste by using every part of fish and vegetables, and by bringing “neglected” local species back to the table. The menu also includes the dessert Can you sea?, created to raise awareness of microplastic pollution. The restaurant’s approach includes social sustainability too, with housing provided for employees. This same care shows in the wine programme: over 200 labels, from Sardinian producers to selected Champagne.
