La Primula
A Canton family landmark

Andrea Canton
Andrea CantonJRE chef Andrea Canton grew up in the Canton family’s restaurant world and took over the kitchen of Restaurant La Primula at a young age. His training included formative time with Gualtiero Marchesi, at San Domenico in Imola, and in France, experiences that shaped his technical base and his interest in modern reading of tradition.

Friuli, in focus
Chef Andrea Canton cooks from Friuli and the wider territory, then refines the dishes with modern technique and a strong sense of clarity. Fish is a signature, matched with seasonal meats and vegetables, and the menu is designed to show the raw material rather than disguise it. Canton’s approach keeps flavours, colours and structure easy to read, even when the ideas are contemporary. Guests can choose à la carte, or follow the tasting menu to see how tradition and innovation meet across land and sea, always with the ingredient as the starting point.
Wine service and events
Restaurant La Primula is built for occasions. The team hosts private dining, banquets and ceremonies, with spaces that range from intimate tables to larger rooms for groups. Wine is part of that experience: the cellar holds over 1,700 labels and the service is designed to be personal, including tailored pairings and by-the-glass options. In the same building, Osteria alle Nazioni offers a more informal lunch format, where Friulian tradition is served simply and well, making it easy to return for different reasons.
A long Michelin story
Restaurant La Primula received its Michelin Star in 1983, when Andrea Canton was 22, and has kept it ever since. In 2023 the restaurant marked 150 years of activity, alongside 40 consecutive years of holding the star, and it continued again in 2024. The point of the history is not nostalgia, it’s consistency: a kitchen that keeps its local references, stays open to new ideas, and relies on a team approach between kitchen, dining room and cellar.
The Magredi setting
San Quirino sits in Friuli Venezia Giulia, between Pordenone and Aviano, close to the Magredi landscape known for its wide plains and a strong local identity. The area has long been a place of passage and exchange, shaped by nearby rivers such as the Cellina and Tagliamento and by a history that reaches back to early medieval records. Today it is a calm base for guests who want serious dining outside the city, with Pordenone close by and the wider province within easy reach.
Hotel La Primula
Hotel La Primula is part of the same address in San Quirino. It’s a small, quiet hotel with six double rooms, set around a garden with internal parking. Rooms look onto the garden and are equipped for a comfortable stay, whether you’re visiting for dinner, travelling for work, or coming with family. The location keeps you close to Pordenone while staying in a calmer setting, and it works well for guests who want to turn a Michelin Star meal and wine cellar visit into an easy overnight.
“A family, a restaurant, a territory since 1873.”
