Joeffrey Fraiche
Joeffrey FraicheOriginally from Alsace, Joeffrey has called the Vaud Riviera home for 15 years. His cooking combines his early French training with Swiss ingredients and a curiosity for global flavours. At Pont de Brent, he crafts dishes that feel both rooted and modern; local fish, alpine herbs, butter-rich sauces, and precise technique define his kitchen.

Cuisine guided by terroir and curiosity
Chef Joeffrey’s menus reflect his Alsace origins, Swiss training and travels abroad. At lunch, you’ll find a market-driven set menu alongside classic à la carte dishes. In the evening, the “Le Grand Voyage” tasting menu showcases Swiss produce—local cheeses, freshwater fish, mountain herbs—with surprising touches inspired by global spices and technique. The result is clean, vibrant, familiar yet unexpected flavours prepared with care.
Shared moments beyond the menu
Le Pont de Brent hosts occasional events; wine pairings, chef’s table evenings and themed dinners. These gatherings, often announced on social channels, bring diners closer to the chef and sommelier through curated experiences that build community and deepen the understanding of local flavours.
Riviera views and cultural richness
You’ll be moments away from the flower-draped quays of Montreux, the UNESCO-listed vineyards of Lavaux, and iconic lakeside sights such as Chillon Castle and the Chaplin Museum. Hiking, jazz, festivals and local markets are all within easy reach. From Les Pléiades to Christmas markets, the region offers a rich local experience in every season.
Local produce front and centre
Chef Joeffrey works closely with artisanal producers from the Vaud Riviera and beyond. Many ingredients, from alpine herbs to lake fish and mountain-grown wines, come from nearby farms. This attention to provenance ensures every plate carries a sense of place and the hands that shaped the ingredients.
A refreshed heritage hotel
Le Pont de Brent sits on the hills above Montreux in a restored small hotel building first revitalised in 1980. The interior is now modern, colourful and inviting. Rooms that respect the past while offering comfort and light. Guests feel at home, yet aware they have entered a carefully curated space of Swiss hospitality and design.
“We’ve brought new life to a place full of history, with a kitchen that’s playful and rooted in the region."
