Chef Coco Montes begins each day with fresh ingredients at their flavour peak, letting nature lead. The result is an ever-evolving, eight-course tasting menu (also available à la carte) that combines French precision with Spain’s best produce. Vegetables often take centre stage, and everything from the sourdough to the ice cream is made in-house. The focus: depth, clarity, and surprise, served warm from an open kitchen.
