A Menu That Changes With the Day

At PABÚ, the menu shifts daily with the micro-season, a concept that goes beyond traditional seasonality. Chef Coco Montes begins each day with fresh ingredients at their flavour peak, letting nature lead. The result is an ever-evolving, eight-course tasting menu (also available à la carte) that combines French precision with Spain’s best produce. Vegetables often take centre stage, and everything from the sourdough to the ice cream is made in-house. The focus: depth, clarity, and surprise, served warm from an open kitchen.

PABÚ partners with Fromagerie Antony to curate an exclusive cheese selection that celebrates artisan craft. Each cheese is chosen for its distinct character and ability to complement the menu’s micro‑seasonal dishes, transforming the cheese course into a refined tasting ritual.

Located in Madrid’s Chamartín neighbourhood, PABÚ offers calm and elegance just minutes from the city’s arteries. The restaurant’s design draws inspiration from New York galleries: high ceilings, warm wood, and tactile materials create a mood of quiet concentration. With space for only 30 guests, this is a place to disconnect, and focus on flavour.

The essence of PABÚ lies in its micro‑seasonal approach. Every day, Coco and his team select ingredients at their peak in flavour and texture from local producers. It’s a commitment to nature’s exact tempo, reinterpreted with precision and soul, and creates a cuisine that evolves constantly and makes each visit unique.

A Space Built for Transparency

With only 30 covers and an open kitchen, the dining room feels like an extension of the culinary team. Guests can watch dishes crafted in real time, while the glass wine cellar, holds over 350 personally selected bottles, organised by feeling rather than region, and adds both transparency and intimacy.

Within its first year, PABÚ earned a Michelin Star, a Repsol Sun, and Best New Restaurant by Tapas Magazine. Its daily-changing menu and respect for micro‑seasonality have drawn praise across Madrid and beyond, confirming its position as a top culinary destination.
